چکیده

Determination of pasta cooking quality was more dependent on a continuous protein network than the physicochemical properties of gelatinized starch. In the absence of coagulated protein, “starch pasta” strands fractured into small pieces and did not swell in contrast to pasta made from flour or semolina after 20 minutes cooking. The starch of semolina was not a key factor related to better cooking quality of pasta compared to starches of hard wheat, but the starch of soft wheat might down grade the cooking quality of pasta. The results of this experiment showed that surfactants, monoglyceride and sodium stearoyl lactylate, did not improve the quality of cooked pasta. They might just interact with protein and not starch, because the cooking quality of “starch pasta” became worse with the addition of monoglyceride. Swelling of cooked pasta was mainly due to the hydration of protein. Pasta swelled to twice its original diameter after 20 minutes cooking, but the diameter of cooked “starch pasta” did not change at all. Differences among various sources of wheat starches could be factors in functional characteristics of cooked pasta, but these differences are not as important as gluten strength and protein

Microstructural Studies of Pasta and Starch Pasta

The processing methods for mung bean starch noodles were used to form “starch pasta” from various isolated wheat starches. The objective of this research was to evaluate the changes in the surface and internal structure of pasta and “starch pasta” made from various flours and wheat starch before and after cooking. Cooked “starch pasta” revealed a honeycomb-like internal structure similar to coo...

Registration of Durum Wheat Germplasm Lines with Combined Mutations in SBEIIa and SBEIIb Genes Conferring Increased Amylose and Resistant Starch.

Durum wheat [Triticum turgidum L. subsp. durum (Desf.) Husn.], used in pasta, couscous, and flatbread production, is an important source of starch food products worldwide. The amylose portion of the starch forms resistant starch complexes that resist digestion and contribute to dietary fiber. Increasing the amount of amylose and resistant starch in wheat by mutating the STARCH BRANCHING ENZYME ...

Synergistic effect of different dietary fibres in pasta on in vitro starch digestion?

Pasta is traditionally manufactured using only durum wheat semolina, but it is possible to incorporate other flours or ingredients into pasta in order to increase its nutritional value to the consumer, compared to conventional pasta. For this reason, pasta was prepared substituting durum wheat semolina with 15% of enriched dietary fibre flours (Glucagel, inulin Raftiline® HPX, inulin Raftiline®...

Role of Durum Wheat Composition on the Quality of Pasta and Bread

Durum wheat (Triticum turgidum L.) is the preferred raw material for the production of pasta worldwide and some speciality bread common in parts of Italy and the Mediterranean region. The quality of such foods in terms of texture, colour, flavour and appearance are determined by raw material quality, processing methods and other ingredients. This review focuses on the raw material composition a...

Variations in Content and Extractability of Durum Wheat (Triticum turgidum L. var durum) Arabinoxylans Associated with Genetic and Environmental Factors

Arabinoxylans (AX) represent the most abundant components of non-starch polysaccharides in wheat, constituting about 70% of cell wall polysaccharides. An important property of AX is their ability to form highly viscous water solutions; this peculiarity has a significant impact on the technological characteristics of wheat and determines the physiologically positive influence in consumption. Dur...
